Ingredients

Shallots- 10 nos

Cucumber- 1/4 cup cut into strips

Potato- 1/4 cup cut into strips

Tomato- 1 cut into strips

Drumtricks- 1

Carrot- 1 cut into strips

Raw mango- 2 strip pieces

Brinjal- 1 cut into strips

Colacasia-1/4 cup cut into strips

Plaintain- 1 cut into strips

Beans- 4 nos cut into strips

Green Chilies- 2 nos

Curry leaves

Grated coconut- 2 cup

Cumin seeds- 1 tsp

Garlic- 3 cloves

Mustard seeds- 1/4 tsp

Coconut oil- 3 tsp

Turmeric powder- 1/4 tsp

Curd- 2 tsp

Methods for preparation

  1. Add all the washed and cut vegetables into a pan.

  2. Add salt and 1/2 cup water and combine well. Cook covered on a low flame for 10 minutes, or until vegetables are cooked perfectly.

  3. Meanwhile coarsely grind coconut, green chilies, cumin seeds,turmeric powder, curry leaves and garlic. Grind it without adding water into a coarse paste. Set aside.

  4. Add ground mixture on top and cover cook for 2-3 minutes in low flame.

  5. Meanwhile, heat a pan add 3 tsp coconut oil with red chilies, mustard seeds, cumin seeds and curry leaves, wait till it fried.

  6. Mix those fried items into vegetable mixture and cook it for a minute, off the flame

  7. Finally, add curd and combine well

  8. Enjoy!! Happy cooking and stay healthy.
