Ingredients
Shallots- 10 nos
Cucumber- 1/4 cup cut into strips
Potato- 1/4 cup cut into strips
Tomato- 1 cut into strips
Drumtricks- 1
Carrot- 1 cut into strips
Raw mango- 2 strip pieces
Brinjal- 1 cut into strips
Colacasia-1/4 cup cut into strips
Plaintain- 1 cut into strips
Beans- 4 nos cut into strips
Green Chilies- 2 nos
Curry leaves
Grated coconut- 2 cup
Cumin seeds- 1 tsp
Garlic- 3 cloves
Mustard seeds- 1/4 tsp
Coconut oil- 3 tsp
Turmeric powder- 1/4 tsp
Curd- 2 tsp
Methods for preparation
Add all the washed and cut vegetables into a pan.
Add salt and 1/2 cup water and combine well. Cook covered on a low flame for 10 minutes, or until vegetables are cooked perfectly.
Meanwhile coarsely grind coconut, green chilies, cumin seeds,turmeric powder, curry leaves and garlic. Grind it without adding water into a coarse paste. Set aside.
Add ground mixture on top and cover cook for 2-3 minutes in low flame.
Meanwhile, heat a pan add 3 tsp coconut oil with red chilies, mustard seeds, cumin seeds and curry leaves, wait till it fried.
Mix those fried items into vegetable mixture and cook it for a minute, off the flame
Finally, add curd and combine well
