Potato kurma

Ingredients

Potatoes- 2, cut into pieces

Chopped onion - 1 cup

Chopped tomatoes- 1 cup

Green chilies - 3

Ginger garlic paste- 1 tsp

Red chilly powder- 1 tsp

Fennel powder- 1 tsp

Coriander powder- 1 tsp

Turmeric powder- 1/4 tsp

Coconut milk - 1.4 cup

Cardamon- 2

Cinnamon- 1 little piece

Cloves- 2

Star Anise- 1

Coriander leaves

Curry leaves

Salt

Coconut oil- 4 tsp

Methods of preparation.

  1. In a pan, add 4 tsp of oil and wait till it become hot

  2. Add cinnamon, cardamon, cloves and star anise and saute it for few seconds

  3. Add chopped onions and green chilies, saute it till becomes nicely brown.

  4. Next add ginger garlic paste and saute it till the raw smell goes out.

  5. Then add tomatoes and salt and saute it till it mashed and soft.

  6. Add turmeric powder, fennel powder, red chilly powder and coriander powder, saute it and add potatoes.

  7. Saute it for 2 minutes and add coconut milk with enough water to cover the potatoes.

  8. Cook it for about 10 minutes in low flame and garnish it with coriander and curry leaves

  9. Serve hot with chapati, dosa, appam, roti, and idiyappam
