White vegetable curry

Ingredients
Onion- 1
Vegetables ( Beans, Cauliflower, Potato and Carrot)- 1 cup
Tomato- 1
Grated coconut- 1/2 cup
Fennel seeds- 1/4 tsp
Spices ( Cinnamon, Cloves, star anise and cardamon)- a piece of each
Curry leaves
Salt
Ginger garlic paste- 1 tsp
Green chilly- 3
Nuts- 5
Pottu kadalai- 1/4 tsp
Cumin seeds- 1/4 tsp
Ghee- 3 tsp
Methods for preparation
Wash and cut the vegetables into pieces, keep aside
Heat a pan with 3 tsp of ghee, add spices and let them fry for a minute.
Add fine chopped onion and tomato, let it spring for a minute.
Then add ginger garlic paste, saute it till the raw smell goes out and add the vegetables with 1 cup water and salt, let them cook for 5 minutes with medium flame
Meanwhile, in a mixer jar add grated coconut, nuts, cumin seeds, green chilies, pottu kadalai, and fennel seeds and grind it become a fine paste.
Mix that too in curry with enough water, let them cook for 5 minute.with low flame.
Garnish with curry leaves and serve it hot
