Ingredients

Corn flour- 3 tsp

Maida- 2 tsp

Coconut oil

Turmeric powder- 1/2 tsp

Black pepper powder- 1/4 tsp

Onion- 2

Tomato-3

Ginger garlic paste- 1 tsp

Spices(cardamon, cinnamon, cloves)- a piece each

Green chilly-2, finely chopped

Coriander leaves

Curry leaves

Methods for preparation

  1. Break open 4 eggs into a bowl and add required salt, pepper powder and mix well. Grease a pan with oil and transfer the egg mixture into that bowl and place it inside an Idli cooker (we can also use rice cooker without adding the cooker weight).

  2. Steam it for 15-20 minutes .Run a knife through the edges and cut the steamed eggs into desired shape and keep it aside.

  3. In a mixing bowl add maida ,corn flour, 1/2 tsp chili powder ,add water and mix well to for a semi thick batter. Coat the cooked eggs and fry it in hot oil. Once they become crispy take it off from the oil and set aside.

  4. In a mixer jar, add onion, tomato and spices, grind it into fine paste.

  5. Heat a pan with coconut oil, add fine paste mixture and ginger, garlic paste. Saute it till it turns golden brown.

  6. Add turmeric powder and red chilly powder, saute it for a minute.

  7. Then add fried egg in that mixture, saute it if you want little gravy then dissolve corn starch in water and add it to the pan.

  8. Finally garnish with finely chopped green chilly, coriander leaves and curry leaves.

  9. Serve it hot to taste.
